the G R A T I T U D E journals: week 5



April 21, 2019


Easter Sunday, He is risen!! I was so blessed to be surrounded by my sweet family and my sweet Cory!! I got to go on a run with my Rosie girl, we went to church as a family, and we all helped to prepare a yummy Easter lunch. The weather was so gorgeous and we played a good round of Nerf football (the only kind of football that is any fun).



Later in the afternoon, Cory made us a traditional Jewish Passover dish and my mom was enthralled. I am so grateful to have a colorful blend of cultures and religions in my life.

Avocado toast is true love.

Abigail and I blessed ourselves with a full Sunday at home so we headed out Monday morning. This was my last drive back to Auburn! I won't miss that. It is always so much easier with a driving buddy. Today, I was grateful that I took the time to have an afternoon for myself after so many days of plans in a row. I have found this to be so SO important over the past few years in school. Alone time can be the most refreshing.

Today was the most ME day I've had in forever. I cranked out 2 blog posts, edited and posted 2 videos, and planned for future posts. It is so fulfilling to spend time on projects that you're passionate about, even if there is no immediate profit. This is a lesson that is often very hard for me to accept as I have so many goals and aspirations when it comes to my online projects. If you need to hear this, it is more than ok to spend time on passion projects. It is ok to prioritize things that you love and that make your heart and soul feel productive over things that you are obligated to do. This morning I got out of my routine, a choice that generally leads to a great time, and spent time with some lovely gals over a coldbrew that wasn't made by me. I am the self-proclaimed maker of the best coldbrew in the world so this was a big adventure for me, an I actually didn't mind it one bit! Shoutout to The Bean, your vintage atmosphere makes me smile.








The best day of the whole year was today. I bought my first WATERMELON of the season and it was so good I did shed a tear. Eating as many of these as possible before I leave for Europe so we'll start the count here.

Once again, I was blessed with blog time and a coffee date with moi. Mal and I made the best vegan ramen for dinner and I've gotten several questions about it so here, my friends, is the recipe:





In a large pan, saute a veggie mix of your choice (we did zucchini, corn, broccoli, and onion) with garlic, salt, pepper, and chili powder. In a pot, saute onion and garlic with salt and pepper and then add one container of veggie broth + that container filled halfway with water (I measure nothing..can you tell?). Add about 2 tablespoons of soy sauce and the juice of half a lime, and bring this mixture to a boil. Add 3 'blocks' of ramen noodles and cook until chewy. Serve with your sauteed veggies and a wedge of lime!

My last day of classes EVER and I am grateful for myself for not failing out of school. I love me for that.



The SWEET sweet girls at our cycling studio invited us to an early viewing of a merch sale at the studio and I am so happy to be surrounded my these strong, smart ladies. Sav, Mattie, and Lauren, y'all are true gems!





I even had enough dining dollars left to treat all the pals to dinner. This was Mal's first time at Chipotle so thank goodness I got to her in time.






Then Mal and I painted away all our troubles and it was the best.























April 27, 2019


After a late night of painting, Abigail and I hit the BEST cycling class (I get stoked about this stuff) and bought 2 more watermelons (this brings the count to 4). She is independent and amazing and I love her.





I spent the afternoon in the sun with Mal and the pups and a red velvet funnel cake...thankful for all THAT. I finished off this week with dinner at a bomb new Thai place in town and MAN, what a full week.


Grateful for it all.
